Homemade Chicken Stock / Easy Chicken Broth

This is a very easy recipe of chicken broth. It has a light flavour of chicken and can be used in soups and other gravies.

Hot chicken bone broth is an excellent home remedy for common cold. When added to gravies or soups it gives a nice chicken flavour to the dish.

For mutton broth substitute the chicken bones with mutton bones.

Ingredients:

  • Chicken bones 2 cups
  • Onion 1 sliced
  • Cinnamon stick 1 inch piece
  • Cardamom pods 2
  • Peppercorns 8-10
  • Bay leaf 1
  • Oil 1 tsp
  • water 6 cups

Method:

In a large pan add a tsp of oil and sauté the bones for 3-4 mins till nicely caramelized to a golden brown colour. Add the sliced onions and the spices and saute for another 3-4 mins. Add water and and bring to a boil. Skim off any foam that gets formed. Reduce the flame and let the stock simmer till the water is reduced to half. Should take around 10-15 mins.

Once the stock reduces to half switch off the flame. Cool the stock for sometime and strain the stock. Store in the refrigerator in a glass jar. It stays good for 3-4 days in the fridge. If you want to store it for longer then store it in the freezer in a food grade ziplock pouch or a plastic container. It stays good for almost a month if frozen. Thaw before using.
