
Todays recipe is a super easy banana cake. It’s a perfect accompaniment to your evening cup of chai.
Every now and then I find some over ripe bananas in my fruit basket and nobody wants to eat them. Since I never like to throw away food I try and make some recipe with it. Of course, these over ripe bananas make very tasty milkshakes but in this post I will give you an easy cake recipe which makes a moist, crumbly cake with a strong banana flavour. This recipe has come out perfect every time I have made it. And what better way to use the over ripe spotty bananas!
Ingredients:
- 1¾ cups Maida (all-purpose flour)
- ¾ cup granulated white sugar
- 1 teaspoons baking powder
- ¼ teaspoon baking soda
- 2 large eggs, lightly beaten
- 100g butter, melted and cooled
- 3 ripe large bananas (I used golden bananas)
- 1 teaspoon vanilla essence

Method:
Preheat oven to 180°C (350°F).
Grease and flour the cake tin. I used a round 8 inch tin. I use the wrapper of the butter to grease the tin and then dust it with a spoon full of flour.
Set aside.
In a large bowl combine the dry ingredients i.e flour, sugar, baking powder, baking soda, and salt.
In another bowl take the peeled bananas and mash with a fork. Add the lightly beaten eggs, melted butter, and vanilla essence. This is your wet mix.
Lightly fold the wet mix into the dry ingredients just until combined.

It is important that you do not over mix the batter. Just lightly fold till the dry ingredients are just about mixed and the batter is still a little chunky
Pour the batter into the cake tin. Garnish it with walnuts(optional)

Bake at 180°C for around 40-50 mins depending on your oven. Once the cake is golden brown. Check if it’s cooked by inserting a toothpick in the centre. If the toothpick comes out clean then the cake is baked.
Remove the cake out and wait for 5 mins. Then turn out the cake on a wire rack.
Notes:
This cake tastes best when warm.
It tastes absolutely delicious just as it is but in case you want to make it a little fancy you can drizzle caramel sauce or Nutella over it.
Remember to use overripe bananas for the sweetest flavours. Overripe bananas will also make the cake nice and moist.
Use room temperature eggs.
DO NOT over stir the cake batter. You want to keep the batter lumpy so the cake is soft, airy and light.
