Caldo Verde / Healthy Potato And Spinach Soup

Caldo Verde (caldo means soup and verde means green) is very popular soup in Goa and you will find it on the menu of many restaurants that serve Portuguese-Goan Cuisine. It is a potato soup topped with shredded greens.

My mom had a Malabar Spinach (Vaal chi bhaji) plant in her kitchen balcony and she would make this soup by adding shredded freshly plucked Malabar spinach. I have used regular spinach leaves instead.

It is a comforting and wholesome soup, which is perfect to warm you up from within. Pretty easy to make and very tasty. Adding vegetable stock or chicken stock adds another layer of flavour to the soup. If you dont have stock then add a maggi vegetable cube for enhancing the flavour.

Ingredients:

  • Potatoes 3 medium sized
  • Onions 1
  • Vegetable stock or chicken stock 3 cups
  • Olive Oil 1 tbsp
  • Spinach leaves 10
  • Salt as per taste
  • Pepper as per taste
  • Water 2 cups

Method:

Heat a large pan. Add olive oil and sliced onions and sauté for 2-3 minutes.

Boil potatoes. Grind to a paste along with the sautéed onions after cooled.

In the same pan add the potato paste and vegetable stock or chicken stock and mix well. Adjust the consistency of the soup by adding water as required. Add salt and pepper powder and boil.

Place the spinach leaves one on top of the other, make a tight roll and finely slice them. Add the shredded spinach leaves to the boiling soup.

Cook for another minute and your soup is ready. Enjoy it piping hot with a generous sprinkling of pepper powder.
