Easy Gajar Ka Halwa / Carrot Halwa

Its that time of the year when desi carrots are in season. Whenever I see desi gajar i think of gajar ka halwa!

The orange carrots are available throughout the year and taste good when added to pulavs, stews, biryanis etc. The long red carrots or desi carrots however are available only during winters and taste best raw in salads or as gajar ka halwa. I usually make gajar ka halwa a few times during winters.

Traditionally this recipe is made using a lot of ghee and sugar. But my version doesn’t use too much of it.

Do try this recipe while desi carrots are in season. It makes a perfect ending to any meal!

Ingredients:

  • Grated carrots 3 cups
  • Sugar ½ cup
  • Milk ½ cup
  • Mava/ khoa ¼ cup
  • Elaichi powder ½ tsp
  • Raisins 1 tbsp
  • Cashewnut pieces 1 tbsp
  • Ghee 2 tbsp

Method:

In a thick bottom pan/ kadhai, heat ghee and fry the dryfruits for a minute.

Remove the dryfruits out on a plate and keep aside.

In the same pan saute the grated carrots on a medium flame for 5 minutes. Stir continuously and take care not to burn the carrots.

Add the milk and boil the mixture. Let the carrots cook on a medium flame. Stir regularly. Do not cover the pan.

This should take around 10 minutes.

Once the carrots are almost cooked and look nice and creamy add the sugar and let it cook till the mixture leaves the pan or oil is released. Taste the mixture and adjust the sugar level if required.

At this point add the dry fruits. Keep a few for garnishing. Also add the grated mava/khoa.and cook for another 5 mins till the khoa blends well.

Keep it over a low flame till the ghee begins to seperate.

Gajar ka halwa is ready. This can be enjoyed hot just like that or with a scoop of vanilla icecream.
