
Sabudana Vada is a very popular Maharashtrian snack. These vadas make a very nutritious breakfast too.
These can be made in advance and frozen and deep fried whenever required.
Perfect for a quick snack to take care of your hunger pangs.
Ingredients:
- Sabudana (sago) ½ cup
- Boiled potatoes 4 medium
- Green chillies 1 chopped
- Jeera ½ tsp
- Salt as per taste
- Sugar a pinch
- Fresh coriander leaves finely chopped 1 tbsp
- Oil for frying
- Roasted peanut powder ¼ cup
- Slice of bread 1 (optional)
Method:
Soak sabudana overnight or for 6-8 hours.
In a large plate, mix the boiled potatoes, finely chopped green chillies, finely chopped coriander, jeera, salt, sugar, roasted peanut powder and sabudana which has been soaked overnight.

Add a slice of bread(optional). Mix the ingredients well. Form small balls and flatten it to shape like a cutlet.

Refrigerate these vadas for a couple of hours. you will get around 20 small sized vadas for this quantity.

Heat oil in a kadhai for deep frying. Deep fry the vadas till golden in colour.
Serve hot with tomato sauce or any chutney of your choice.

Notes:
For soaking the sabudana, do not add too much water. Wash and soak the sabudana in water such that all the sabudana is just about soaked. Adding excess water will make the sago mushy.
Adding a slice of bread helps in binding the mixture well together.
